My name is Dave Saunders and my interest in nutrition began nearly 10 years ago. I have an engineering background and had a stereotypical engineer's diet. I ate pizza a couple of times a week, had little if any fresh food in the house, and drank mostly soda and coffee. I spent a lot of time at the gym and thought I was healthy because I had no symptoms. That all changed when I got the first of the four "Flesh Eating Bacteria" infections I was to encounter in my life. It's a very humbling thing to go from being a energetic, outgoing person to being in bed for six months and being told it's quite like you're going to die from toxic shock any day (either from the bacterial waste or from the antibiotics).
All through this, I never considered that nutrition could have any role in my state of health. I survived those four infections with staggering dosages of antibiotics, steroids and other drugs to help manage the side effects of the primary drugs. At this point I was also dealing with arthritis in different parts of my body, and my vision was cloudy and sometimes spotty. Still I regarded myself as "healthy" because lots of people deal with these sorts of things so I thought this was a normal thing for someone turning 30.
I started studying nutrition when I had a chance encounter with a research doctor on a cross-country flight. As we discussed my experiences this doctor told me that what was wrong was inside me and that I should turn my energy to leaning more about the machinery of the human body because what was happening to me might be common but it is certainly not normal. He told me there is a clear link between good nutrition and good health as well as a link between bad nutrition and bad health.
So here I am year later. I have not only taken steps to improve my diet and reduce processed foods and sugar-filled beverages from what I eat, but I also learned that the USDA has identified a continual decrease in the nutrition quality of our food supply so I found that quality supplementation is also necessary for my diet. I no longer have any symptoms of arthritis. When the weather changes suddenly, I do not have the random aches and pains that used to cause me such discomfort. My vision has improved greatly and most importantly, I have even cut myself while on camping trips and not suffered from any infection.
I am a certified educator with the American Nutriceuticals Association and I have a certification in nutrition accredited by the University of Miami Medical School. This is the first nutritional education program, accredited by a major university, to include the role of glyconutrients in proper cellular function. I am currently working on Board Certification with the American Naturopathic Medical Association as a Holistic Health Practitioner.
